Zest of one orange
1/2 cup water
1 tsp. salt
1/2 cup sugar
Juice of one orange
Milk - enough to have one cup total orange juice and milk
1 beaten egg
1 cup flour
1 cup whole wheat flour
2 tsp. baking powder
1/4 tsp. baking soda
1/4 cup shortening
1/2 cup chopped nuts

Directions:
Directions:
In medium saucepan, combine zest, water, salt and sugar. Bring to a boil; boil for 10 minutes. Set aside to cool.

Add milk to orange juice to equal 1 cup total. Set aside.

Add egg to cooled orange zest mixture. Beat well. Set aside.

Sift flours with baking powder and baking soda into large bowl. Cut in shortening until completely combined. Add in orange zest mixture and orange juice/milk mixture. Stir vigorously until ingredients are moistened. Stir in nuts.

Put into greased and floured loaf pan.

Bake at 350º for approximately 1 hour.
