1 c All purpose flour
1/2 tsp Garlic powder
1/2 tsp Ground cumin
1/2 tsp Chili powder
1/2 tsp Salt
1 c Milk (approx)
1 Head cauliflower (1 1/2 lbs)
1/3 c Buffalo wing sauce
Ranch Salad Dressing (optional)

Preheat oven to 450ºF. Line a rimmed baking sheet with parchment paper. In a bowl, whisk together flour, garlic powder, cumin, chili powder, and salt. Whisk in enough milk to achieve consistency of thin pancake batter. Cut cauliflower into wing-size pieces, removing tough stems and leaves. Add cauliflower to batter and stir gently to coat well. Using tongs, place cauliflower pieces in a single layer on prepared baking sheet. Bake for 15 minutes. Turn over and bake for another 10 minutes or until golden brown. Gently toss pieces with buffalo sauce. Return to baking sheet and bake an additional 5 minutes to set sauce. Let cool slightly, then serve with ranch dressing for dipping if desired.
