3 slices bacon, chopped
½ c. onion, finely chopped
2 T. unsalted butter
2 pounds Yukon Gold potatoes, peeled and sliced ½" thick
½ tsp. salt
1 T. chopped fresh parsley

Directions:
Directions:
Cook bacon in a 12-inch nonstick skillet until golden brown and starting to render (3-5 minutes). Add onion and continue cooking until onion is soft and golden brown (another 3-5 minutes). Transfer bacon and onion to a bowl, leaving bacon fat in the skillet.

Add butter to the skillet and let it melt over medium heat. Add the potatoes and salt and toss to evenly coat the potatoes. Cover and cook 9 minutes, stirring occasionally. The oil should be bubbling around the potatoes at this point but if there is no moisture reduce the heat a bit. If there is no bubbling at all, increase the heat. Keep covered and cook another 6-9 minutes until the potatoes are easily pierced with a fork.

Remove the lid and stir the potatoes every few minutes until they are golden brown (this could take up to 10 minutes).

Stir in the bacon, onion, and parsley. Season to taste with black pepper and additional salt, transfer to a platter and serve.
