2 medium eggplants (1/4 inch rounds)
1/2 lb. Mortadella, thinly sliced (Italian deli bologna)
1/2 lb. provolone cheese, thinly sliced
3 eggs for egg wash
3 cups seasoned bread crumbs
2 Tbsp. extra virgin olive oil

Directions:
Directions:
Preheat oven to 350º. Cut eggplant crosswise, into 1/4 inch slices. Lay mortadella and provolone over eggplant slices, then cover with another eggplant slice. Dip sandwiches in egg wash, then cover in breadcrumbs. Place on a cookie sheet, then spritz with olive oil. Bake at 350º until golden brown, about 20 to 30 minutes. Serves 6-8.

I used to watch The Chew, and saw a guest, Mama T, who came on from time to time to cook for the hosts. This episode was in March 2012. I thought this sounded delicious and it is. Serve with tomato sauce (see recipe index), if desired.
