1 Cup Unsalted Butter, Softened
3 Cups Sugar
6 Large Eggs
1 tsp Vanilla Extract
1 tsp Rum Extract
1/2 up Sour Cream
3 oz Peach Gelatin
3 Cups All-purpose Flour
1/2 tsp Salt
1/4 tsp Baking Soda
1/4 tsp Cinnamon
1/8 tsp Nutmeg
2 Cups Chopped Peaches

Directions:

1. Beat butter and sugar until fluffy.
2. Add eggs one at a time, beating well after each.
3. Stir in extracts
4. In a small bowl, combine sour cream and gelatin
5. In another bowl, whisk together flour, salt, baking soda, cinnamon and nutmeg.
6. Gradually add flour mixture to butter mixture, beating at low speed until combined.
7. Fold-in sour cream mixture and peaches.
8. Flour spray a tube pan and pour mix in.
9. Bake at 325 for 1 hour uncovered then cover loosely with foil and and bake until toothpick comes out clean, about 40-50 minutes.
10. Let cool in pan for 10 minutes the remove to wire rack to cool completely
