Ingredients: 4 beef cube steak (About 1 1/4 lbs. total) Salt and black pepper 1/4 cup all-purpose flour 2 T olive oil 1 1/4 cup thinly sliced onion

Directions:1. Place a rack in the center of the oven and preheat the oven to 300 degrees (250 degrees if you plan to leave it in the oven longer than an hour and 15 minutes). 2. Pat the steaks dry with paper towels and season them on both sides with salt and pepper. Place the flour i a shallow bowl. Dredge both sides of the steaks in the flour, then shake off the excess. 3. Heat the oil in a 5 to 6 quart heave, covered flameproof casserole or Dutch oven over medium high heat. Add the steaks and brown them on both sides 1 minute per side. Transfer the steaks to a plate. Add the onion to the casserole. Reduce the heat to medium and cook the onion, stirring with a wooden spoon Unti it softens slightly, 1 minute. Pour in 2/3 cup of water and stir to loosen up any brown bits stuck to the bottom of the casserole. Bring the mixture to a boil. then turn off the heat. Place the steaks on top of the liquid and onions and cover the casserole. 4. Place casserole in oven and Bake the steaks until they are fork tender and the liquid has thickened into a gravy, about 1 hour and 15 minutes. Serve the steaks topped with onions over mashed potatoes or mashed cauliflower. |
