1/4 cup Spanish rice
1/2 lb smoky pulled pork
15 oz can green enchilada sauce
1/8 tsp chili powder
1/8 tsp cumin
4 oz can diced green chiles
1/2 tsp dried cilantro
1/4 tsp salt
1/8 tsp pepper
1 cup shredded Monterey Jack cheese (divided)
2 burrito-sized tortillas
1 green onion for garnish

Directions:
Directions:
1. Preheat over to 400 degrees.
2. Prepare rice according to package directions.
3. In a medium bowl, toss smoky pulled pork with 1/2 cup of green enchilada sauce, chili powder, cumin, diced green chiles, cilantro, prepared rice, salt and pepper.
4. Spray an oven safe baking dish with non-stick cooking spray.
5. Spread 1/4 cup of green enchilada sauce on the bottom of baking dish.
6. Scoop half of the pork mixture into each tortilla.
7. Sprinkle with 1/2 cup Monterey Jack cheese, divided evenly between the two.
8. Roll up burritos, folding the ends in like an envelope as you roll.
9. Place burritos seam-side down in prepared baking dish.
10. Pour remaining green enchilada sauce over burritos.
11. Sprinkle with remaining 1/2 cup Monterey Jack cheese
12. Bake 20 minutes or until burritos are heated through and cheese is melted.
