2 Tbsp. Dijon mustard
2 tsp. dried thyme leaves
2 tsp. coarse salt
1/2 tsp. fresh black pepper
2 tsp. dried marjoram
2 tsp. paprika

Directions:
Directions:
Pat the turkey dry with paper towels. Mixed together the course salt, pepper, thyme, marjoram, paprika, and mustard. Rub the mustard mixture all over and under the turkey. The mixture will cover a 12-14 lb turkey.

I first tried this turkey rub from one of Mom’s, The Pleasures of Cooking (a Cuisinart publication) Magazine, Nov/Dec 1984 issue. It is delicious and makes a beautiful presentation. Eve and Rita still use it every Thanksgiving. The recipe is by Perla Meyers, who is a cookbook author and cooking teacher.
