4 eggs
1 C vegetable oil
1/4 C applesauce
1 C white sugar
1 C brown sugar
2 tsp vanilla
2 C flour
2 tsp. baking soda
2 tsp. baking powder
1/2 tsp. salt
2 tsp. cinnamon
1 C walnuts
3 C grated carrots
8 oz. crushed pineapple

Grease and flour a 9 X 13 cake pan and preheat oven to 350º
In a large bowl beat together eggs, oil, applesauce, sugars and vanilla. Combine all dry ingredients in a separate bowl then add to creamed ingredients, then stir in the carrots and the walnuts. Pour into pan and bake for 40 to 50 minutes or until toothpick inserted in center comes out clean. Let cool.

Cream Cheese Frosting
1 cube softened butter
8 oz. cream cheese
4 C powdered sugar
1 tsp. vanilla.

Beat together and spread over cooled cake.
