4 large eggs
2 tsp. baking powder
2 c. sugar
½ tsp. salt
2 tsp. vanilla extract
¼ c. butter, cubed
2 c. all-purpose flour
1 c. milk

Coconut Topping:
1 ½ c. packed brown sugar
¾ c. butter
½ c. half and half cream
2 c. flaked coconut

Directions:
Directions:
In a large bowl, beat the eggs, sugar, and vanilla until thick and pale yellow, about 4 minutes. Combine the flour, baking powder and salt; add to egg mixture and beat just until combined. In a saucepan, bring milk and butter to a boil, stirring constantly. Add to batter and beat until combined. Pour into a greased 13x9 inch baking pan. Bake at 350° for 30- 35 minutes. While cake bakes prepare the icing. In a medium saucepan combine the brown sugar, butter, and cream. Cook the mixture over medium heat until it comes to a boil then turn off the heat and stir in the coconut. Once the cake has baked remove it from the oven and turn on the broiler. Spread the icing evenly over the cake, then place the cake under the broiler for 3-5 minutes, or until the icing is bubbling all over. Remove the cake from the oven to a wire colling rack and cool to room temperature in the pan before slicing and serving.
