1 cup chopped onion
1 cup diced celery
8 oz mushrooms, chopped
1˝ tsp. poultry season
˝ cup butter or margarine
1 tsp. salt
˝ tsp. pepper
10 cups firm type bread cubes
Chicken stock or broth

Directions:
Directions:
In skillet, sauté onion, celery, and mushrooms in butter, around 5 minutes.

Stir in poultry seasoning, salt & pepper, cook 3 more minutes.

Add mixture to breadcrumbs, toss until well blended.

Chicken stock or broth may be added to your taste.

Makes 10 cups, enought for a 10 - 15 pound turkey.

When I first found this recipe, it doesn't call for any chicken stock or broth. I feel it needs a little for my taste.
Since I do stuff the turkey, I add some chicken broth, but not a lot since stuffing will soak up the juices while baking. Just add to your liking.
