Directions:1) Place the thawed cherries in a colander over a large bowl and allow them to drain, collecting the juice. It took almost a full day to collect the required 4 cups of juice. SO, if you don't have 4 cups after this ...my suggestion is during that thawing time move around the cherries. Do this a couple of times. Also, drain the juice you do have into a bowl and put it in the refrigerator. Then take the cherries that are sitting in the colander and put them in the refrigerator to continue collecting juice. In the morning you should be ready to go. 2) Get your water bath canner with the canning jars heated up, while getting the gel ingredients together. 3) In a large saucepan, whisk together 4 cups cherry liquid, sugar, and clear gel. Stirring constantly, bring the mixture to a boil over high heat. Cook until it begins to thicken. (IMPORTANT: ONLY 4 CUPS OF CHERRY LIQUID IS USED HERE) 4) Add lemon juice, and return the mixture to a boil for 1 minute. 5) Add the cherries to the pot, and return the mixture to a boil. Stir thoroughly, and be sure the whole pot is heated at this step because any cool spots will cause trouble during the canning process. 6) Remove from heat and ladle into prepared canning jars, leaving 1 inch headspace. 7) Screw on 2 part lids to finger tight and process in a water bath canner for 35 minutes. Turn off heat and allow the jars to sit in the canner for another 5 minutes before removing them to cool. |

I purchased one case (lb. @ $1.88) Bought one case which weighed 26.58 LBS (case is usually 27 LBS) and costed $49.97. That was a lot of cherries.
Bought a cherry picker to remove the seed. Yep, I would say this is a necessity tool to use. Another big help was having my daughter and my 4 year old granddaughter wash the berries and remove the pits. That was a lot of cherries turned into Cherry jam, cherry pie filling, cherry syrup, and freeze dried cherries. JUST AWESOME!
