1-2 cups shredded Mozzarella
5 Roma tomatoes, diced
3-4 fresh basil leaves, chopped
Extra virgin olive oil
Salt and pepper, to taste
1 baguette
Balsamic glaze

Directions:
Directions:
Mix tomatoes, basil and a turn of olive oil. You just want a light coating of olive oil. Salt and pepper to taste. Set aside.
Slice baguette to desired thickness. Lightly drizzle/brush with olive oil on each side of bread. Toast in a 350º oven, for about 5 minutes. ***Do not over toast bread, it will get very hard***
-Once bread is toasted, spoon tomato mixture on top, sprinkle with mozzarella cheese, drizzle with balsamic glaze and enjoy !! Serves 6-8.
