1/2 cup all-purpose flour plus more for dredging
1/4 cup cornstarch
2 T. instant mashed potatoes
1/2 tsp. cayenne pepper
1/2 tsp. dried thyme
1 cup club soda
2-3 cups of Panko ( Japanese bread crumbs )
Fine salt to taste
2-3 medium onions cut 1/4 inch thick and separated into rings
Vegetable or peanut oil to fry

In a shallow bowl, whisk together, flour, cornstarch, instant mashed potatoes, cayenne and thyme.

Stir in club soda.

Pour bread crumbs into a second shallow dish and the dredging flour into another.

Fill heavy bottomed pot with 2 inches of oil and heat to 365º to 370º F.

Dip onion rings into flour, then in the batter and coat with breadcrumbs.

Drop onion rings immediately in oil.
Brown on both sides, about 2 minutes.

Drain on wire rack over sheet pan and sprinkle with salt. Serves 8.

Can be sat in warm oven until ready to serve.

These heat up well in oven the next day. Serves 8.

I have been making these onion rings for about 15 years and they stay very crispy. I saw Chef Carla Hall make these when she was on The Chew talk show.
