6 quarts water
1 whole lemon, cut into wedges
8 cloves garlic, peeled and smashed (leave whole)
1 large onion, quartered
1/2 cup Old Bay Seasoning
1 lb medium red potatoes, quartered (skins on)
3 tsp salt
4 ears fresh corn, husked, cut into 1-inch pieces
*14 oz Andouille sausage, cut into 1-inch pieces
1½ lbs. shrimp, peeled and deveined (tails on)
1/4 cup butter, melted
2 Tbsp fresh parsley, minced
1 whole lemon, sliced for serving

Fill a large stockpot with 6 quarts of water. Add the squeezed lemon wedges, garlic, quartered onions and Old Bay to the water. Stir to combine, bring to a boil over medium high heat. Add the potatoes and salt, allow to cook for about 10-15 minutes. Add the corn and *sausages pieces. Cook covered 5 minutes. Add the shrimp. Cook covered just until the shrimp turn opaque, 2-3 minutes. Using a slotted spoon to drain the water, transfer all to a large bowl. Save some of the cooking water for next step. Place 1/4 cup butter in a small bowl. Pour in 1 cup seasoned cooking broth in bowl, stir until butter is melted. Pour the butter mixture over all. Gently toss to coat. Transfer all to a platter, or traditionally on a dining table, lined with plastic tablecloth and/or newspaper. Serve with lemon wedges, chopped parsley, and hot sauce, if desired. Serves 6.
* We used Kiobassa brand sausage or Hillshire Farm kielbasa. We grill them, then cut them up and serve along with the shrimp boil.

I found this recipe and first tried it for our Benjamin and Brittany’s wedding shower. It was a big hit with the family. It’s a keeper.
