TX Sheet Cake:

* 2 cups all-purpose flour (250 g)
* 2 cups white sugar (400 g)
* 1 teaspoon baking soda
* 1 teaspoon cinnamon for traditional TX sheet cake
* ½ teaspoon salt
* ½ cup sour cream
* 2 eggs
* 1 cup butter
* 1 cup espresso
* 6 tablespoons (generous) unsweetened cocoa powder
Icing:
* 6 tablespoons milk
* 5 generous TBSP unsweetened cocoa powder
* ½ cup butter
* 4 cups confectioners' sugar (*) (512 g)
* 1 teaspoon vanilla extrac
* 1/2 teaspoon espresso powder
* 1 cup chopped walnuts (Optional)

1. Preheat the oven to 350°. Grease and flour a 9 x 13 pan. (This is a smaller pan for thicker cake with increased cooking time - be careful not to dry out)
2. Melt butter in a saucepan over low heat. Stir in espresso and cocoa powder. Bring mixture to a boil then remove from the heat. Allow to cool slightly.
3. Make cake: Combine flour, sugar, baking soda, and salt in a mixing bowl. Beat in sour cream and eggs.
4. Stir cooled cocoa mixture into step 3 mixture until blended.
5. Pour batter into the prepared pan. (Batter will be thin)
Bake in the preheated oven until a toothpick inserted into the center comes out almost clean, about 30-40 minutes.
6. While the cake is baking, make icing.

ICING
1. Combine milk, espresso powder, cocoa powder, and butter in a large saucepan over medium heat.
2. Bring to a boil, then remove from heat.
3. Stir in confectioners' sugar and vanilla,
4. Fold in walnuts, mixing until blended.
5. Spread icing over warm cake.
