8 slices thick cooked bacon, cut in squares
1 onion chopped
2 Jalapeno peppers chopped
1 cup cooked ham, chopped
Pinto Beans, 4 cups uncooked (one bag)
1 can Rotel or diced Tomatoes
4 cup Chicken broth
2 tsp cumin
1 tsp oregano
2 cloves garlic
2 TBS brown sugar
2 tsp Paprika
1 tsp salt and Pepper

Soak pinto beans overnite. In morning, drain, rinse and put into Crock Pot.
Add chicken broth and Cook on high for 4 hours. I add more chicken broth/water as they cook and run out of juice. then add all the other ingredients. And cook for another 3-4 hours until beans are soft.

We like to add cilantro and lime juice right before we serve.

You could add all the other ingredients right away to uncooked beans and chicken broth and leave cooking on high if you need to. I have tried both ways and always good.
