1 cup butter
2 cups flour
2 Tbsp sugar
6-8 cups chopped rhubarb
6 egg yolks
21/2 cup sugar
4 Tbsp flour
1/2 tsp salt
1-11/2 cup cream
6 egg whites
4 Tbsp sugar

Directions:
Directions:
Combine the first three ingredients and press into a 9x13” pan. Bake for 10 minutes at 350 degrees.
Stir together the rhubarb, egg yolks, sugar, flour, salt and cream. Spread over the baked crust and bake about 45 minutes, until firm but still a little jiggly.
Whip the egg whites until stiff. While beating the whites, add the sugar. Spread over

This dessert is probably our overall favorite rhubarb dessert. It is like a cream pie but with the ease of making bars. Michael and Mark really like this one.
