3 eggs
1 c. salad oil
1 c. sugar
1 c. packed brown sugar
3 tsp. maple flavoring
2 c. unpeeled, shredded zucchini
2 1/2 c. flour
1/2 c. toasted wheat germ
2 tsp. baking soda
1 1/2 tsp. salt
1/2 tsp. baking powder
1 tsp. cinnamon
1 c. finely chopped nuts (optional)

Directions:
With a mixer, beat the eggs. Blend in oil, sugar, and flavoring and continue beating until mix is thick and foamy. Stir in shredded zucchini. Combine the flour, wheat germ, soda, salt, baking powder, cinnamon, and nuts. Stir gently into zucchini mix, just until blended. Grease and flour 2 9x5 loaf pans. Bake in 325-350º oven about 1 hour or until done. Test with a toothpick.

This recipe is from the 1980 Luverne, MN Christian Reformed Church cookbook and was Granny's (Ruth Hengeveld) favorite. The cinnamon isn't in the original, Donna added it in the margin of the cookbook.
