PRAWN MERINAIDE:

Prawns - 250 grams deveined & de shelled with tails on
1Tbsp ginger and garlic paste
1/2 tsp Salt and Pepper each

FOR DREDGE:

1/2 Cup flour
1/4 Cup corn or potato starch
1tsp smoked paprika
1 tsp red chili powder
1 tsp salt

TO FRY:

Oil - enough to deep fry

SAUCE:

1 Cup mayonnaise
1 Tbsp chipotle sauce
1tsp soya sauce
1tsp honey ( I use maple syrup)
1 Tbsp ketchup
4 scallions, chopped only the greens ( didn’t use these in sauce)
Salt and pepper to taste

Toasted sasame seeds to sprinkle ( white and Black)

1. Marinate the prawns with all the ingredients under - prawn marinade for 10 Minutes

2. In a bowl mix all the ingredients under - dredging and carefully coat all the prawns. Set aside

3. Meanwhile on medium heat, heat oil in a deep saucepan. Once oil is hot( not smoking) carefully tip in the coated prawns. Fry for 2 mins to till they are crispy golden brown. Set aside.

4. Mix all the ingredients under sauce and slather on all the fried prawns. Garnish with more green scallions and white and black sesame seeds. Decorate in a cocktail glass with salad leaves or on a serving dish.
