1¼ cups cake flour
1 T. sugar
¼ tsp. salt
½ tsp. cinnamon
2 tsp. baking powder
2 large eggs (separated)
1 cup milk
1¾ cups finely chopped apples. (peeled)
6 T. butter, melted

Syrup:
3 cups peeled and thinly sliced apples
⅔ cups packed brown sugar
¼ tsp. salt
2 T. all-purpose flour
2 cups water
¼ cups heavy cream
1 tsp. cinnamon

Waffles:
Stir together the dry ingredients. In a small bowl, whisk the egg yolks, then add the milk and whisk again. Pour the egg mixture into the dry ingredients and mix until smooth. Add the chopped apples and melted butter. Using a mixer, beat the egg whites until they are fluffy and stiff. Fold the egg whites into the batter. Spoon the batter into a hot waffle iron and cook.

Syrup:
Place the apple slices in a saucepan over medium heat. Add the water. Allow the apples to come to a gentle boil and cook for two minutes. Add the sugar and salt. In a small bowl, combine the milk, flour and cinnamon. Stir into a smooth paste. Add the paste to the apples and cook until slightly thickened, stirring constantly. This should take about 3-4 minutes. Remove from the heat and serve over waffles.
