1 9" frozen deep dish pie crust
1 tbsp butter
1 shallot, thinly sliced
3 Scallions, white parts thinly sliced
4 large eggs
1 1/4 cup heavy cream
pinch of nutmeg
3/4 tsp salt
1/8 tsp cayenne pepper
4 oz finely shredded cheddar gruyere cheese
10 oz frozen chopped spinach, thawed and drained

Directions:

Preheat oven to 400. Partially thaw the crust, prick with a fork, and bake for 10-15 minutes.

Reduce the oven heat to 325. Sautee the shallot and scallion in butter until soft and translucent.

Whisk together the eggs, cream, and spices.

Spread the shallots on the bottom of the crust. Add the cheese on top of the shallots, then evenly distribute the spinach. Pour the egg and cream mixture and place in the oven.

Bake for 50-55 minutes. Make sure the egg mixture is set and lightly golden brown.
