2 5 Gallon Buckets Tomatoes
5 lb Onions
40 Garlic Cloves
5-6 Bell Peppers
8 oz. Italian Seasoning
1 tsp. Salt, per Quart

Directions:
Directions:
Quarter peeled & cored tomatoes and onions, place in a large (40qt) pot. Add garlic cloves. Remove stem & seeds from bell peppers, cut into pieces, add to pot.

Simmer until all vegetables are tender. Use immersion blender or food processor to chop the vegetables to desired texture. Simmer until some of the liquid cooks off.

Add Italian spices. Stir well. Simmer 10 - 20 minutes to soften spices and incorporate flavor.

Ladle into clean Quart jars. Add 1 tsp. Salt.

Pressure can at 10lbs for 40 minutes.

Use as soup starter, spaghetti sauce or as desired.

The longer you cook it, the thicker it will be. I cook mine for 1 to 1 1/2 hours. If I’m using for spaghetti sauce, I simmer it for an hour or two as I use it.
