6 cups cucumbers
4 cups cauliflower
2 cups onion
2 cups green peppers
2 cups red peppers

900 ml tomato puree
2-1/2 cups cider vinegar (make sure it has a strength of at least 5%)
2-1/2 cups white sugar
3/4 cup brown sugar
369 ml tomato paste
4 tsp. paprika
6 tsp. garlic powder
1-1/2 tsp. allspice
3/4 tsp. cinnamon
3 tbsp. mustard seeds
1/8 tsp. ground cloves

1/2 cup pickling salt

Directions:
Put the first 6 ingredients in a food processor a bit at a time. Process into 1/4" pieces. Don't process to a paste.

Transfer vegetables to large bowl. Sprinkle with pickling salt and cover with boiling water. Stir well. Let sit for 1 hour. Then strain through a sieve. Rinse well with cold water. Drain well. Let sit in large bowl on an angle so you can spoon out excess water that drains.

In a large pot, combine the second set of ingredients. Bring to a boil and simmer for 15 minutes.

Add the vegetables to the sauce and return to a boil. Simmer for 15 minutes until mixture starts to thicken.

Fill 500 ml jars and process for 15 minutes in water bath canner.
