I double this recipe as Bites can be reheated. Very yummy.

2 cups grated Zucchini
2 eggs beaten
½ cup flour or potato flakes
½ cup gratted parmesan cheese
½ cup shredded mozza or cheddat
¼ cup chopped onion or green onion
½ tsp salt
2 T canola oil

Mix and grill in waffle maker (or fry in oil)
