Preheat the oven to 500 degrees.

Put a cast iron frying pan on the stove on very high heat (no oil). Season the steak with salt, then put the steak in the fry pan and sear for 1-2 minutes on each side until browned.

Add pepper after browned on both sides. Then transfer the cast iron frying pan to the oven at 500 degrees. Roast for 5-10 minutes depending on thickness of steaks.

Remove from the oven and let rest for 4 minutes before slicing
