2 tablespoons instant coffee granules
1 tablespoon cocoa powder
½ cup hot water
2 eggs
¾ cup oil
1 teaspoon baking soda
1 teaspoon baking powder
pinch salt
1 teaspoon vanilla extract
¾ cup packed brown sugar
½ cup milk or pareve milk
2 cups flour, divided
⅔ cup caramel chips, plus more for sprinkling

Directions:

Preheat oven to 350.
Line muffin pans with paper liners and set aside.
In a small jowl, combine coffee, cocoa powder, and hot water. Set aside.
In a medium bowl, whisk together, eggs, oil, baking soda, baking powder, salt, vanilla and brown sugar until combined. Add milk and 1 cup flour. Whisk to combine.
Using a sturdy spoon, stir in remaining flour until completely smooth.
Add in Caramel chips.
Spoon the batter into prepared muffin pans, filling each cup about ¾ full.
Sprinkle a few more chips on top of each muffin.
Bake about 16 minutes, until set on top.
These muffins freeze well.
