2 small- medium eggplant (large ones are more seedy
2 small -medium yellow squash
2small- medium zucchini (or one large one)
3 ripe tomatoes
1 medium sweet onion
24 ounce tomato sauce
Olive oil
Salt
Pepper

Directions:
Directions:
Put sauce on bottom of pan
Chop all veggies and put in a large bowl
Drizzle with olive oil , salt and pepper
Mix it up
Repeat with olive oil and salt and pepper
Put all veggie on top of sauce
Cover with parchment paper
Bake at 350 for ABOUT 45 minutes (until all veggies are tender
Bake about an additional 10 minutes uncovered

Should be very moist but nit at all watery
