2 cups of cooked chicken, diced
4 stalks of celery, chopped
1/2 medium sweet onion, chopped
1 Tblsp. minced garlic
2 Tblsp. butter
2 Tblsp. olive oil
4c chicken broth
1c white rice
1 bag of riced cauliflower, drained
1/4c flour
Salt
Pepper

Directions:
Directions:
- Coat pan with olive oil and bring to medium heat.
- Cook celery and onion until onions are translucent and then add in garlic and let cook for 1-2 minutes.
- Add in butter, melt and then add flour and let roux cook for 2-3 minutes.
- Add in chicken broth, chicken and rice and bring to a strong simmer. Then cover and cook on medium-low for 15-20 minutes.
- Stir in riced cauliflower and add salt & pepper to taste

-I use rotisserie chicken to make life easy and add extra flavor.
-Make sure the cauliflower is REALLY well drained.
-This would also be good to add a little heat with Cajun seasonings
