1 tablespoon butter
1 tablespoon extra-virgin olive oil
1 medium onion, chopped
3 medium potatoes, peeled and cut into 1/4-inch cubes
1 medium carrot, coarsely shredded
1 pound cooked corned beef, cubed
1 tablespoon chopped fresh parsley
1/4 teaspoon ground black pepper, or to taste
1/4 teaspoon dried thyme leaves
1 pinch salt to taste

Melt butter with olive oil in a large skillet over medium heat. Cook and stir onion until lightly browned, about 8 minutes. Stir in potatoes and carrot; cook, stirring occasionally, until tender, about 15 minutes. Stir in corned beef, parsley, pepper, thyme, and salt. Cook, stirring often, until hash is crisp and browned, 10 to 15 more minutes.

My mother used leftover corned beef, potatoes, onions, and carrots. She cubed the corned beef and potatoes and chopped the carrots, onions and garlic. She then fried everything, except the corned beef until potatoes were browning, then added the corned beef to brown a little. She did the same thing with leftover pot roast. We ate this with a splash of vinegar and catsup.
