- Pack of medium size flour tortillas
- 1lb of boneless skinless chicken, diced
- 1 pack McCormick chicken taco seasoning
- 1 Orange bell pepper, diced
- 1 tblsp of dehydrated minced onion
- 1/2 jar of salsa con queso
- 1c shredded cheddar cheese

Directions:

- Preheat oven 375
- Sauté chicken, bell pepper, onions. Mix in 1/4c salsa con queso at the end, once chicken is cooked.
- Line a greased baking dish with a layer of flour tortillas.
- Add a layer of queso, cheese and chicken and top with another layer of tortillas
- Repeat until dish is full. After last layer of tortillas, repeat one layer of queso and top with shredded cheese.
- Bake uncovered for 20 minutes

Original recipe calls for a can of refried beans heated and mixed with a little water to thin them out and then to add to the layering process but Robbie won’t eat beans.
