2 tbsp sunflower oil
1 onion, finely chopped
1 green chilli, finely chopped
1 tsp black mustard seeds
1 tsp turmeric
2 in fresh root ginger, peeled and grated
1 clove garlic, peeled and crushed
1 tbsp ground coriander
1 lb mixed vegetables, sliced (carrots, beans, cauliflower, aubergines etc)
1 oz creamed coconut
6 fl oz water
2 tbsp fresh coriander, finely chopped

Directions:
Directions:
Heat the oil in a large heavy pan, add the onion and sauté until soft.
~Add the ginger, garlic, chilli and mustard seeds and fry for a minute or two more, stirring frequently.
~Stir in the turmeric and coriander and cook for one minute.
~Add the vegetables and coat with the spices.
~Add the creamed coconut and water and bring to the boil.
~Cover and simmer for 25- 30 minutes until the vegetables are tender.
~Sprinkle with fresh coriander before serving.
