2-3 tbsp sunflower oil
2 onions, chopped
1 clove garlic, peeled and crushed
1 green chilli, finely chopped
2 tbsp ground coriander
1 tsp cumin seeds
1 tsp cardamom seeds, crushed
1 tsp turmeric
˝ tsp fenugreek
3 lb chicken, jointed
2 oz creamed coconut
12 fl oz water

Directions:
Directions:
~Heat the oil in a large heavy pan, add the onions and sauté until soft and golden.
~Stir in the garlic, chilli and spices and fry for several minutes, stirring frequently.
~Add the chicken joints and cook until well browned on all sides.
~Add the remaining ingredients and bring to the boil.
~Cover and simmer for 45-55 minutes until the chicken is tender.
~Season to taste.
