2-3 tbsp sunflower oil or ghee
2 onions, chopped
2 green chillies, finely chopped
3 cloves garlic, peeled and crushed
2 tbsp ground coriander
1 tsp ground cumin
1 tsp ground cinnamon
1 tsp ground cloves
1 tsp fenugreek
˝ tsp ground ginger
1 lb braising steak
seasoned flour
3 tbsp red wine vinegar
1 pint beef stock
1 bay leaf
1 tbsp garam masala

Directions:
Directions:
~Heat the oil in a large pan, add the onions, chillies and garlic and sauté until soft.
~Stir in the spices and cook for a minute or two more.
~Trim the meat, cut into chunks and dust with seasoned flour.
~Add to the pan and cook until it is lightly browned on all sides.
~Pour over the vinegar and stock and add the bay leaf.
~Bring to the boil, cover and simmer gently for 1˝ -2 hours until the meat is tender.
~Adjust the seasoning to taste. Stir in the garam masala before serving and remove the bay leaf.
