1 lb neck of lamb
2-3 tbsp groundnut oil
2 onions, chopped
2-3 cloves garlic, peeled and crushed
1 inch fresh root ginger,peeled and grated
1 green chilli, finely chopped
1˝ tsp ground cumin
1 tsp ground coriander
1 tsp ground paprika
1 tsp black mustard seeds
1 tsp fenugreek
˝ tsp fennel seeds
a good pinch ground cinnamon
1 lemon, juice
seasoning
3 tbsp sour cream
fresh coriander, finely chopped

Directions:

~Trim the meat and cut into chunks. Heat the oil in a pan, add the onions, garlic, ginger and chilli and sauté for 10 minutes. Add the spices and fry, stirring constantly, for a further 3-4 minutes. Stir in the meat and cook until browned on all sides.
~Add the lemon juice and a little water.
~Season to taste and cover. Bring to the boil and simmer gently for 1˝ hours. Remove from the heat and stir in the sour cream or yoghurt. Return to the stove and heat through without boiling. Serve with a garnish of coriander leaves.
