4 lamb shanks
1 tbsp vegetable oil
3 cloves garlic, peeled & crushed roughly
1 inch piece fresh root ginger, peeled & grated
2 onions, chopped
1 oz flour
1 orange, Juice and rind
5 fl.oz white wine
2 tbsp rice vinegar
½ pint chicken stock
Large pinch of saffron strands
1 tsp good curry powder
Salt and pepper

~Set oven to 350°F or Mark 4. Heat the oil in a flameproof casserole dish and brown the lamb shanks all over.
~Remove the meat and set aside. Add the garlic, ginger and onion and cook for 2 to 3 minutes.
~Return the lamb to the casserole, stir in the flour and cook for 1 minute.
~Add the orange juice and rind, the wine and the rice vinegar and cook for 3 to 4 minutes to reduce the sauce.
~Stir in the stock, saffron and curry powder and season well.
~Bring back up to heat, cover and transfer to the oven.
~Cook for about 1½ hours or until the lamb is tender.
~Serve with boiled rice.
