2 free range eggs
2 tbsp caster sugar
250 ml milk
250 double cream
½ tsp vanilla extract
⅓ loaf of white bread or 4-6 croissants,brioche or Pantone
25g butter
25g dried fruit
Sprinkle of Demerara sugar

1 pre heat oven to 180c/gm4
2 lightly oil a dish
3 mix eggs ,sugar , milk , cream and vanilla extract together in a jug
4 slice bread of your choice , butter and arrange in overlapping slices in the oven proof dish leaving some edges sticking out at the top so they crisp up
5 scatter the dried fruit amongst the slices of bread
6 pour the mixture over the top to cover most of the bread
7scatter the Demerara sugar over the top
8 bake in pre heated oven for 29x30 mins

In this lesson I made it with chocolate orange instead of the dried fruit so I added some orange zest,
chocolate orange pieces and Java cakes but I don’t recommend the Jaffa cakes
