Ingredients: 126 grams all-purpose flour 14 grams sugar 14 grams malted dry milk 1 tsp baking powder 1/2 t kosher salt 1//4 t baking soda 1/3 cup cold unsalted butter

Directions:Combine all dry ingredients into a food processor, then divide butter into 1/2-inch slices and add to the dry ingredients. Process in the food processor until butter is fully distributed. Remove the ingredients from the processor and put them into a batter bowl. Beat the egg in a separate small bowl then add the milk to the egg and mix again. Combine the egg and milk mixture to the dry ingredients in the batter bowl and lightly stir until fully combined. The batter may seem thin, but this is the correct consistency for this batter.
Heat electric griddle to 375 degrees. Melt some butter over the griddle and pour the size pancake you prefer. When small air bubbles form on about 50% of the pancakes, it is time to flip them. The second side will cook a little faster.
Serve with syrup

Notes: I made up the dry ingredients and the butter in the food processor the previous night, then I refrigerated it until the morning. Then I add the egg and milk the next morning.
Double the recipe for a larger crowd.
