1 egg, beaten
pinch of salt
flour to make into a ball

Combine beaten egg and salt. Add flour a little at a time, stirring well into the egg with each addition. When the egg and flour dough is no longer sticky, knead the dough until smooth. Roll out like pie crust, until it is VERY thin. The dough wants to spring back, but be patient and keep rolling. Cut the thin dough into about 3" strips. Stack the strips and cut noodles about 1/4" wide. Separate cut noodles by picking them up and letting them fall through your fingers. Drop noodles into boiling broth and stir. Cook about 13 minutes.

This recipe came from my mother (Violet Greenslade). Us kids loved mom's homemade noodles! Mom always served them over mashed potatoes; like a replacement for gravy. Mom made the broth from beef short ribs (my favorite), or from chicken.
