1 tbsp unsalted butter
¼ cup finely chopped yellow onion
¼ cup heavy (whipping) cream
1 tbsp cornstarch
1 can (10 oz) Rotel Original Diced tomatoes green chiles, undrained
8 oz Monterey jack cheese, shredded
8 oz medium cheddar cheese, shredded
Tortilla chips, for serving

Directions:

1. Heat butter in a medium saucepan over medium heat until melted. Add onion and cook until tender, about 5 minutes. Whisk together heavy cream and cornstarch ina small bowl. Pour undrained tomatoes and cream mixture into saucepan, bring to a boil. Stir in cheese one handful ay a time until melted.
2. Remove from heat and serve warm with tortilla chips
