8 slices bacon, halved
1 medium onion, chopped
1/2 medium green pepper, chopped
3 28 oz cans pork and beans
3/4 c bbq sauce
1/2 c brown sugar
1/4 c distilled or cider vinegar
2 tsp dry mustard or 2 T dijon
pineapple - 1 can crushed or 2 cans chunks with liquid

Directions:
Directions:
Cook bacon in a large skillet until it is 3/4 cooked and rendered 1/4 c at least of fat. Set aside bacon on paper towels and drain off rest of the fat. Cook onions and peppers until tender, about 5 minutes. Whisk together bbq sauce, brown sugar, vinegar and mustard, and add it to the pan. Add beans and pineapple, stir to combine.

Put bacon slices on top, and bake uncovered at 325 for 2 hours.

Served this at 4th of July party in Port Ontario - huge hit! Can crumble up bacon also...The pineapple is optional but adds a nice sweetness to contrast.
