8 Cups of Water
1 1/2 cups of Kosher Salt (Add another Cup if using Diamond Crystal Brand)
3 Pounds of well-scrubbed Red or White Potatoes, as uniform in size as possible, leaving the skins on
1 Stick of Butter, cut into pieces
Freshly snipped Herbs (optional)
Pepper

Directions:
Directions:
Bring Salt and Water to a boil and add Potatoes. Cook until tender, about 25 minutes.
Drain the potatoes in a strainer, and place pot back onto stove over medium heat and add butter. When just melted, after about a minute, add Potatoes and if desired, Herbs and Black Pepper. Toss and serve immediately.

The Salt Potato is an iconic Central New York dish, that got its start in the late 1800s, when salt was distilled by boiling water from marshes around Syracuse. New York workers, many of them Irish would dump the potatoes in boiling vats and then have lunch.
