1/4 cup low sodium soy sauce (or coconut aminos)
2 tablespoons pure maple syrup
1 teaspoon onion powder

1/2 cup yellow diced onion
1 tablespoon minced garlic
4 cups broccoli florets
1/2 cup cooked lentils


Cooked Rice
chopped green onion
sesame seeds

Prepare the Mongolian Sauce:
In a small bowl, mix together the soy sauce, maple syrup, and onion powder. Set aside.

In a large skillet, water saute the onion until browned and translucent, about 10 minutes. Add garlic and continue to saute for around another minute.

Once the onion is golden, add the broccoli and cook, stirring frequently for around 5 minutes.

Add the cooked lentils and Mongolian sauce and stir. Cook, stirring, for 2-3 minutes or until the sauce bubbles and thickens. Remove from heat and serve over rice (optional).

I first made this June 2023 and it's really good! The original recipe called for less broccoli and more lentils but when I made it I realized it would taste so much better with more broccoli and a little less lentil. But it's so delicious!
