6 T. butter
5 medium yellow squash, sliced 1/4" thick
1 medium yellow onion, diced
2 t. salt
3 large eggs, lightly beaten
1 c. sour cream
1/2 c. milk
1 c. shredded cheddar cheese
1/2 c. shredded swiss cheese
1/2 t. black pepper
1 large or 2 small sleeves buttery crackers, crushed
1/4 c. Parmesan cheese, shredded

Preheat oven to 350º. Grease 2 qt. baking dish (11x7") with cooking spray.
Melt 3 T. butter in pot over medium heat. Add onion and squash, salt and pepper. May add Tony's and garlic powder if desired. Cook until tender and juice is evaporated.
Transfer to baking dish using spoon with holes to drain off juice.

Stir together eggs, milk, sour cream, and cheeses in large bowl. Add salt and pepper to taste. Pour over squash and combine.

Melt 3 T. butter in microwave safe bowl. Add crackers and stir together. Add Parmesan cheese and stir thoroughly. Sprinkle over top of casserole.
Bake until golden brown and mixture is set, about 20-30 minutes.

Let cool before cutting and serving.
