3 small to medium eggplant, peeled and diced
1 roll breakfast sausage
1 package frozen chopped seasoning or fresh chopped seasoning
1-2 cups cooked white rice

Directions:
Directions:
Brown sausage in pot until well done. Add chopped seasoning and let cook down. Add eggplant and continue to cook over medium heat until tender. Add Tony's seasoning and garlic powder to taste. Remove from heat and add in enough rice to keep dressing moist.
