2 cups raw pumpkin seeds
1 tsp vanilla extract
1/2 tsp cinnamon
1/4 tsp salt
2 Tbsp coconut oil, melted (or other neutral oil)
1 Tbsp maple syrup
1/4 tsp cardamom

Directions:
Directions:
Spread the pumpkin seeds in an even layer on a large baking sheet and bake at 350º for 12 - 15 minutes, until golden brown and lightly toasted.
Remove pumpkin seeds from the oven and cool for a few minutes.
Pulse the seeds in a food processor until a crumbly, paste-like texture is achieved.
Add the melted coconut oil, cinnamon, salt, maple syrup, and cardamom.
Continue to pulse until a smooth seed butter forms.
