1½ sticks margarine softened
1 cup granulated sugar
1 egg + 1 yolk
1 teaspoon vanilla
1 teaspoon baking soda
½ teaspoon kosher salt
1 2.8 oz package of instant vanilla pudding
2 cups flour
½ cup colored sprinkles

Directions:
Directions:
Cream margarine and sugars on medium speed for 2 minutes.
Add egg and yolk, vanilla, baking soda, and salt.
Mix until combined, scraping the sides of the bowl, if needed.
Mix in the pudding for 30 seconds.
Lower speed and add the flour. Mix until just combined.
Last add the sprinkles and mix until just combined.
You can refrigerate the dough if needed.
Preheat oven to 350.
Line a baking sheet with parchment paper and make balls (scoop tablespoon).
Bake cookies 10-12 minutes.
Yields approx. 4 dozen
