8-9 Cups tomatoes, peeled, chopped and drained
3 1/2 Cups onions, chopped
1 1/2 Cups red bell peppers
3/4 Cup jalapeño peppers, chopped, seeds removed
6 Cloves garlic, minced
1/16 Cup canning salt
1 Tsp black pepper
1/8 Cup sugar
1/3 Cup vinegar
1 (15 ounce) Can tomato sauce
1 (6 ounce) Can tomato paste
1/3 Cup cilantro

Directions:

Peel, chop and drain tomatoes.

Mix all ingredients together and bring to a slow boil for 10 minutes.

Seal in jars and cook in hot water bath for 10 minutes.

This homemade salsa was one of our family favorites back when I was gardening and canning. Made with homegrown tomatoes, sweet Vidalia onions, and fresh peppers—oh my goodness, it was so good! After all the chopping, everything went into one big pot. Since it took quite a while to come to a boil, I’d sneak little spoonfuls to taste. Matthew was always right there with me. Before long, we’d give up pretending it was just “tasting,” grab a bowl, open a bag of crispy tortilla chips, and enjoy it as lunch. Fresh, simple, and absolutely delicious—what a great memory.
