1/4 Cup olive oil
1/8 Cup balsamic vinegar
1 Tsp sugar
1 Tsp salt
Black pepper to taste
1 Pound cherry tomatoes, cut in half
1 (15 unce) Can black-eyed peas, drained and rinsed
1 (15 ounce) Can black beans, drained and rinsed
1 (11 ounce) Bag frozen sweet corn or fresh
1 Vidalia onion, diced
1 Red pepper, diced
1/2 to 1 Cup cilantro, chopped
1 Jalapeņo pepper, diced
1 Bag frozen sweet corn
1/2 Juice of a lime

Directions:
Directions:
In a large bowl, whisk together the olive oil, vinegar, sugar and salt. Add rest of ingredients to bowl and combine.

Serve with crispy chips.

Get your spoon ready!

To me this is best served fresh and at room temperature. When the tomatoes sit for a while and or refrigerated they get very mushy.
