3-4 boneless chicken breasts (can use tenders)
1 egg (beaten)
Plain or seasoned panko bread crumbs
Oil for browning
1 C. chicken broth
Mushrooms (if desired)
1 C. Muenster cheese

Directions:
Directions:
Cut breasts into bite-sized pieces (or tenders if preferred). Marinate chicken in beaten egg at least 1 hour. Drain chicken and roll in bread crumbs. Brown lightly in oil (can use Pam™ if preferred).

Place browned chicken in casserole dish. Add broth. If desired, top with mushrooms. Cover with cheese. Bake at 350ºF for 30 minutes.

The second time I cooked this, it smelled so good when I was browning it (using the seasoned Panko crumbs) that we decided not to complete the recipe. So I just put the browned chicken into a pan (covered lightly with foil so it wouldn't dry out) and baked it about 15 minutes to finish cooking. It was wonderful that way also!!
